A very easy cake to make with delicious ingredients, a real treat for a special occassion! Gluten free cake with a jammy filling


pistachip lemon and lime cakeIngredients

225g soft butter
225 golden caster sugar
4 eggs
1 tsp vanilla essence
1 tbsp golden syrup
225g of self raising flour

or for gluten free
225g gluten free flour
1/2 tsp xanthan gum
1 tsp baking powder

50g pistachicos - whiz up (if you are buying with shells, then you will need a 250g bag)
250ml quark, creme fraiche, low fat cream cheese or full fat greek yoghurt
3 tbsp icing sugar
150g lemon and lime marmalade (we used Oak Lane bought from Tesco)

Icing sugar to dust



1. heat the oven to 180C

2. Cream the butter and sugar

3. mix in one at a time the eggs

4. add the vanilla essence, golden syrup, pistachios and mix well

5. Stir in the milk - add enough to achieve a thick cake batter (remember gluten free cakes can get away with being a little runnier than normal cakes - the mixture needs to just drop of the spoon)

6. Divide the mix between to sandwich tins

7. Bake for 30 - 40 mins or until an inserted knife comes out clean

8. Allow to cool on a rack before add in the filling


1. Mix the quark / yogurt / creme fraiche / soft cheese with the icing sugar

2.Put one cake on a stand or plate and smother the surface in jam

3. Spread the fresh mix over the top

4. Place the other sponge on top and dust with more icing sugar

carrot coriander soup potato freeEasy peasy recipe - throw all the ingredients into a Soup Maker or boil in a pan for 22 minutes and liquidise

This is such an easy way to use up old carrots (or new) and because it uses dried coriander, you dont have to plan ahead and have fresh in stock! It's great if you cant eat potatoes too!

I do love my soup maker as it does the hard work for me once the ingredients are rougly chopped, added to the machine and the smooth setting selected! Hot soup in 22 mins!


500g carrots, chopped

1 onion, chopped roughly

2 cloves garlic or 2 tsps of frozen garlic pieces

3 tsp dried coriander

1 tbsp lemon juice

1 tsp garlic italian seasoning or mixed herbs

1500ml vegetable sotck

Pepper to taste (I dont add salt as the stock should have plently!)

Serve with quark or creme fraiche

A delicious chocolate muffin recipe which can be iced or add chocoate chips or add cake mixture to two ring tins for a fab birthday cake. See Gluten free and dairy free options (if non dairy milk is used)


170g vegetable margarine / olive spread
100g caster sugar
170g of self raising flour
3 dessert spoons golden syrup
2 heaped dessert spoons of cocoa powder
3 eggs

FOR Gluten free

replace the self raising flour with
170g gluten free flour
1/2 tsp xanthan gum
1 tsp baking powder

4 - 8 tbsp Milk (dairy / rice /soya / coconut) as required (add plenty to get a smooth mixture)

OPTION - Throw in 100g of chocolate chips into the mix before baking


Top with icing and cake decorations!


1. Preheat oven to 170°C

2. MIX ALL the ingredients together until smooth (an electric mixer is great)

Add milk if the mixture appears to thick, aim for a light fluffy mix - dont be scared! you may need more than you may think

3. Put cases in muffin tin

4. Add a large tablespoon of mixture to each case

5. Bake for 20 minutes or until inserted knife comes out clean

spanish omeletThis is a really low fat option for a spanish omlete. Delicious and is a perfect supper! Serve with salad or low fat chips.

Serves 2

spanish omelet cookingIngredients

1/2 red pepper (or bell pepper)

1/2 onion

3 mushroom

1 large potato

3 eggs

Dry fry spray





Serve with a salad



1. Slice the potato and place in a shallow pan, cover with water and boil for 10mins

2. In a frying pan (spray with dry-fry) add the pepper, onion and mushrooms and cook until tender and put into a bow until needed

3. Whisk the eggs (season to taste) 

4. When the potatoes are soft, place in the frying (add more dry fry spray if needed)

5. Top with the vegetables and then the egg

6. Cook on a medium heat for about 5 minutes (add a lid to the fying pad if possible

7. Cook the top side of the omelet under a hot grill (about 5 minutes or until cooked)


Serve with green salad
